Pure purée


Right now, my house has a wonderful smell...and it's coming from the slow cooker. I'm making the easiest soup of all time, in my opinion. This is what I make when I want something easy, nutritious, and quite filling. I don't even know what to call it, actually. But here's the recipe:

1 onion
1 celery stalk
1 sweet potato
2 small potatoes
1 parsnip
2 carrots
half an apple, cored
4 cups water or stock
4 Tbsp quinoa
fresh ginger slice (peel and cut slice the size of a toonie)
4 Tbsp Bragg's (or more to taste)
tsp curry powder
salt and pepper to taste


Coarsely chop the veggies and throw all these ingredients in a slow cooker. Let it simmer for a few hours. When the veggies are soft, blend the soup in batches. Then put the purée back in the slow cooker and simmer for another 30 minutes. Serve with fresh, whole grain bread or rolls.

The curry and ginger give this soup a wonderful warmth and the apple, a hint of sweetness. And did you know that quinoa is a complete protein? It is one of the most nutritious foods you can add to your diet.

I have a box of quinoa in my cupboard that has been just sitting there because I haven't known what to do with it. I'll have to try this recipe out!
